Food with low GI value (less than 55) is more slowly digested and metabolized than food with high GI value and it slower rises in blood sugar, therefore, and insulin levels. One of many benefits of low GI food is very good in weight control.

These are moderate glycemic foods, and they should be used with caution. The scale is from 55 to 69 for moderate glycemic foods.
